El principal estado productor se localiza en Guerrero Negro, Baja California con una producci\u00f3n de&nbsp;<\/span><span lang=\"ES\" style=\"font-family: Arial, sans-serif; font-size: 12pt;\">7,434,700, seguido de estados como Veracruz con 1,035,070 toneladas, Yucat\u00e1n con 522,324 toneladas, Nuevo Le\u00f3n con 467,258 toneladas, Tamaulipas con 140,000 toneladas, Colima con 75,000 toneladas, Sonora 28, 500 toneladas y Sinaloa con 15,175 toneladas.<\/span><\/div>\n<div style=\"font-family: Times-New-Roman; line-height: normal; margin-bottom: 0.0001pt; margin-top: 0px; text-align: justify;\">\n<span style=\"font-family: Arial, sans-serif; font-size: 12pt;\"><b>&nbsp;<\/b><\/span><\/div>\n<div style=\"font-family: Times-New-Roman; line-height: normal; margin-bottom: 0.0001pt; margin-top: 0px; text-align: justify;\">\n<span style=\"font-family: Arial, sans-serif; font-size: 12pt;\">La sal (cloruro de sodio) es rico en minerales, como potasio o magnesio, indispensables para nuestro funcionamiento. Hay sales que vienen de mar y sales que vienen de minas. Aunque venga de mar, en su proceso pierde yodo y magnesio, y se le agrega aluminio y az\u00facar para poder conservar su color, pues se blanquea. Es econ\u00f3mica y sirve para resaltar el sabor de los alimentos y como conservador, de ah\u00ed que la saboreemos en distintos insumos de la industria alimenticia, por ejemplo, en las botanas\u00bb, explic\u00f3 Beatriz Attolini, creadora de la empresa Cocina de Autor.<\/span><\/div>\n<div style=\"font-family: Times-New-Roman; line-height: normal; margin-bottom: 0.0001pt; margin-top: 0px; text-align: justify;\">\n<span style=\"font-family: Arial, sans-serif; font-size: 12pt;\">&nbsp;<\/span><\/div>\n<div style=\"font-family: Times-New-Roman; line-height: normal; margin-bottom: 0.0001pt; margin-top: 0px; text-align: justify;\">\n<span style=\"font-family: Arial, sans-serif; font-size: 12pt;\">La sal de mesa s\u00ed ayuda a digerir las grasas, aunque no brinda un beneficio adicional. Incluso consumir esta sal en exceso provoca que eliminemos calcio y que en alg\u00fan momento retengamos l\u00edquidos, de ah\u00ed que se hayan tomado medidas como el retiro de saleros en las mesas de los restaurantes, para prevenir la hipertensi\u00f3n arterial. El procesamiento de esta sal es algo que comenz\u00f3 en el siglo XX, contextualiz\u00f3 la experta.<\/span><\/div>\n<div style=\"font-family: Times-New-Roman; line-height: normal; margin-bottom: 0.0001pt; margin-top: 0px; text-align: justify;\">\n<span style=\"font-family: Arial, sans-serif; font-size: 12pt;\">&nbsp;<\/span><\/div>\n<div style=\"font-family: Times-New-Roman; line-height: normal; margin-bottom: 0.0001pt; margin-top: 0px; text-align: justify;\">\n<span style=\"font-family: Arial, sans-serif; font-size: 12pt;\">Para Beatriz, la sal de mar o sal marina es la ideal para nuestro consumo, sin embargo comercializarla es ilegal.
